Looks like a neck reset is in order.
If it were me. I would.
1 remove neck
2 remove fingerboard
3 straighten fingerboard with heat, steam, and clamping.
4 flatten neck, plane and sand till dead flat.
5 replace fingerboard
6 reset neck to proper angle
7 check fingerboard and plane flat if needed.

I have cut and cured lots of wood. Cutting thin when green results in potato chips. Seal the end grain as soon as the tree is cut, seal again after boards and splits are made. Total time about 4 hours but I am slow. No special tools just some tapered pegs you can get from the cane supplier and a awl but everyone should have one. Lots of instructions on line.

No finish on the cane. The frame the cane is on is 5/8 inch thick so the cane is 5/8 inch away from the baffle board. I routed the back of the frame 1/8 inch deep to leave a space for all the knots. I used natural cane because I had it but there is a plastic cane that would work might be better. The...

Woven by hand on an oak frame. Holes are 1/4 inch spaced a little less than 3/4 inch.

I went searching for a grill covering. Being cheap and not needing a large piece I thought of some left over cane from a chair project. The box is waiting for a warm day to get coated with truck bed liner.

Most table saws even cheap ones can be "tuned". It took several hours the first time, but I have my blade within 0.0005 inch referenced to the miter slot and 0.001 to the rip fence. Even new out of the box a lot of table saws could use a "tuning".

Potentiometers can be used as variable resistors or voltage dividers depends on the circuit. I didn't watch the video. I would need to see the circuit diagram to answer your question.

No argument here the methods work. My point is you don't need to spend big bucks on a granite slab for woodworking.
