That really depends on the specific pieces of wood you're using, but here's some ballpark numbers.
Top - 0.10" to 0.12"
Back - 0.08"
Sides - 0.07"
Bracing - 1/4" to 5/16"

Another alternative is to level the board itself along the string paths, including the desired relief. If the frets are uniformly seated, no fretwork is required.
I usually do have to dress a few frets, but nowhere near a complete leveling.

It's a little heavy for a neck, but I did use it on a mostly mesquite guitar for a friend of mine.

The other option is to recess the pearl enough to completely cover the top with CA. It can be built up with several layers, and sanded to the radius of the board. Having a "cover" of CA over the pearl does alter the appearance slightly, on some types of pearl it looks better to me. Test it...

TruOil does not dry on Pao Ferro without it being sealed with shellac. I've also become sensitized to Pao Ferro, and don't use it anymore.

In my opinion, the best way to accentuate the figure is to sand the surface very smooth, at least 600 grit and maybe even 1000. That may cause adhesion problems with many finishes, but it works nicely with TruOil, which is my first choice of finishes.

The key to French polish over a sunburst is using a water based stain/dye/tint on bare wood. Mr. Condino hand rubs the colors to make the burst, but you can also spray the colors. I'll be working on a guitar that has fret buzz on the E6 string, frets 2, 3, 4 and 5 only. Barry's right, chasing them down one at a time will be unproductive. That depends on what you mean by "testing pickups". Anything is fine if all you are interested in is seeing that they work.

In the context of guitars, Barry is right. It may be acceptable in some types of furniture, depending on the joint. If there's no tension on the joint, it might hold. I still would not recommend it.
