Update. Kiddo is almost 4 months old. I'm actually way more productive after having the kid, because it forces me to keep my crap together. I can get maybe a few minutes a week, with maybe a few hours on a weekend. That being said, my son's smile in the morning (usually with a poopy diaper) warms my...

I'm less experienced than everyone else.

What I did was just set the braced top/back onto the rims...and use a small hand plane to remove side wood until the surface is flush/passive fit.
Then, I glue the surface on.

Maybe I'm doing something wrong?

I totally feel you. I have those moments all the time...especially when I'm under high stress (which is most of the time).
I try to follow checklists, protocols, and keep solid documentation.
Some days, I can only do the bare minimum.

I don't trust my garage to be moisture controlled or rat free.

You don't call it anything. That is just being a dad. When a guy says he is babysitting (when talking about his own kids) he implies that he feels like that is not really his job and he is doing something nice for his wife. Harsh, but spot on.
