Looks pretty good. One way to clean up the edges of the inlay after sawing it out is to use a set of needle files. Also, practice removing less wood and getting a tighter fit. What did you color your glue with?

Tack cloths are good for cleaning off dust before finishing. It is overkill for glue joints. Just blow or brush them off. A tiny bit of dust will not hurt the joint. I agree with Bryan about the fret end bevel. If you want maximum real estate then file the frets at about 90 degrees. Just soften the edges of the fret so you don't slice a finger.

I would never make a neck like that. The fingerboard should be flush with the neck. If you want a wider fretboard then make a wider neck to match.

I don't think a heavy finish will hurt the tone of a solid body. In that situation, the only real downside of a heavy finish is they tend to chip and crack more easily than a thin finish. Solvent wiping is not recommended. Rosewood binding will glue well with Original Titebond.

Nitro is definitely a tradition thing, but it is also a very easy material to spray and level. The ability to burn into previous coats is an important property. But other finishes are fine if you keep the finish thin. Thick finishes are what kill tone. SM pushes their rattle cans cause it makes good...

Let me add one more idea. If the cleat is fairly flat on top, you might be able to use a rare earth magnet with some sandpaper stuck on it to sand it away. I have done this on a few repairs and it is amazing how fast this can remove wood. Use fairly large and flat magnets about the size of the cleat...

I would leave it. The only practical removal technique would be trying to stick a chisel under the edge and popping it off, but that would risk a crack. It should not cause any detriments to the guitar if you leave it in place.

By the way, I like to install very small carbon fiber rods in my necks so that they do not overcome the truss rod. My rods are DragonPlate Carbon Strip (rectangle) .092" x .220". They are quite small but are surprisingly stiff. This costs a little over $10 for a 48" long bar.

I see no structural or tonal benefits to the Spanish heel. However, there is the consideration of how the guitar is to be constructed.
